IMG_4091-1024x682Tah Tsai (Tatsoi) with Fried Bacon: 


  • 1 bunch tah tsai 
  • 1 package Applegate Farm bacon or other quality brand
  • 1 medium size or 1/2 large white onion
  • Approx. 10 -12 mushrooms or 1 container
  • 2-3 cloves garlic
  • 1 teaspoon olive oil
  • 2 tablespoons tamari (gluten free soy sauce)

Rinse tah tsai and remove larger stems, separate them then set aside to dry

Wash then chop onion, garlic, and mushroom

Place bacon in a lightly greased pan so it doesn’t stick, but don’t put too much oil (about 1 teaspoon is enough) as bacon is very high in fat and will produce its own cooking grease as it heats up


Turn the heat up to medium high and let cook until crispy, breaking the bacon up and turning occasionally


Take bacon out with tongs and place on a plate covered with paper towel to absorb some of the fat

Let sit while you cook up your greens, as it cools it will become harder and easier to break up to sprinkle over the top of the greens


Pour out all but 1 tablespoon of the bacon fat from the pan

Turn down heat from medium high to medium low

Add in pre chopped onion, then garlic, then mushrooms to the pan, in that order for maximum flavor, allowing each to cook for a minute before adding the rest

Top it with 1 tablespoon tamari and stir


Chop tah tsai stems, place in pan with other veggies and stir, the stems will take slightly longer to cook than the leaf

IMG_4083Add in tah tsai leaf then top with the rest of the tamari and stir


Plate, then crumble hardened bacon by hand over the top of the greens, serve and enjoy!
