• 1.5 lbs bonesless skinless chicken thigh or 4 large thighs
  • 2 sweet potatoes
  • 8 mushrooms
  • 2 shallots
  • 2 scallions
  • 6 cloves garlic
  • 2 red peppers
  • A handfull of baby carrots
  • Tamari
  • Fresh cilantro
  • Fresh mint
  • 1 jar fire roasted diced green chili’s (found at Trader Joe’s)

Preheat oven to 375 degrees fahrenheit

Lightly grease a stone enameled baking dish

Add in all the veggies

Top with chicken and sprinkle the chicken with fresh herbs, crushed red pepper flake, turmeric and tamariIMG_5352Cover the dish and cook for 1 hour 10 minutes, remove half way through the bake time to stir and bury the chicken in the veggies adding tamari once more

I start with the chicken on top of everything else so that when it cooks, the juices cook into the veggiesIMG_5372After the hour and 10 minutes, removed the chicken, sprinkle it with sea salt, and place in the broiler for 5-8 minutesIMG_5364Remove, chop and add the chicken to the veggies, let sit for a half hour covered to let the juices marinate
