I have had friends asking me for this recipe for about a year. I pretty much live on these and have had co-workers and friends try them many times, all with rave reviews. My Fiance’s Mom Teresa has always made these for me and she was kind enough to share her recipe for my blog. She shows her love by cooking everyone in the family their favorite foods weekly, so you just know that something that contains this much love is going to be good! These are very simple to prepare using only 5 high quality ingredients. They are gluten free, high in protein, contain veggies, and are absolutely delicious, definitely Whole Foodie Booty Bridal Approved!

Zucchini Pancakes

Ingredients

  • 3 zucchini
  • Approximately 1/2 cup garbanzo bean flour
  • Approximately 1/4 cup olive oil
  • 1 egg
  • Salt to taste

Yields about 10 pancakes

*Please note: These measurements are approximate, much like myself my Fiance’s mom doesn’t measure, she cooks to taste. I really encourage you to develop your palate so that over time you start to do this as well!

Wash and peel zucchini with a grater

Shred zucchini into a bowl

Add in garbanzo bean flour, about 1/4 cup to start

Add 1 egg and mix

Add in salt, this will pull the liquid from the zucchini so you may need to add more garbanzo bean flour to balance this

Mix all ingredients together, adjust salt to taste

The picture below is what it should look like, you are looking for a dense texture, not too watery

Heat olive oil in a pan to high heat, 8 out of 10 on the dial

You will need approximately 2 tablespoons of olive oil so the pancakes do not burn

Make sure olive oil is very hot before adding batter

Spoon the batter into the pan spreading to about 3-4 inches wide

Cook for 2 minutes on each side

Flip to each side one more time for approximately 30 seconds per side

When making multiple batches be mindful of watching your cooking time as it will decrease as the pan continues to heat

Total cook time is 5-6 minutes

Place pancakes onto a plate covered with paper towel to absorb excess oil as they cool down
