Polish Beet Salad IMG_4690 Ingredients:

  • 8 medium sized beets
  • 1 medium white onion
  • Sea salt to taste approximately 2 teaspoons depending on how salty you like it and how sweet the beets are
  • Balsamic vinegar to taste (approx 3-4 tablespoons)
  • 1 teaspoon olive oil

IMG_4557IMG_4563 Wash beets then place in a pot and cover with water Bring to a boil and cover with a lid, then turn the heat down and continue to simmer for 1 hour Take the beets out and run under cold water to or let them sit for up to a half hour to cool them down While the beets cool, chop up onion, set aside IMG_4617 Peel skin off with a peeler IMG_4567 Take beets and shave using a grater into a bowel IMG_4582 Add salt IMG_4626 Add approximately 2 tablespoons balsamic vinegar IMG_4628 Mix in onion IMG_4644_2   Add in 1 tsp olive oil to seal in the flavor Stir Taste, adding more salt and vinegar as needed IMG_4664     Cover bowl with plastic wrap and place in fridge for up to 1 hour to really let the flavors marinate Serve and enjoy!
