Looking for a party option, a fun weekend meal, or the perfect girls night in meal? I have one for you that is cheap and easy to prepare! I know you are probably thinking, how can Nachos be on a health and wellness blog, but done the right way, you can eat anything you want, by just making a few easy tweaks.

Nachos are the ultimate comfort food, I found all the ingredients to make this delicious, healthy option at Trader Joe’s. I can prepare most of these myself but sometimes it’s nice to just throw it together to minimize prep time. It takes 3 minutes to prepare and will satisfy your crunchy, salty chip and cheese cravings without adding the pounds. As always, watch your portion and listen to your stomach, stop when you are satisfied, not stuffed!

While all of this is prepackaged and canned, I did read the ingredients to make sure there was no added sugar, nothing unpronounceable and no ingredients I didn’t recognize. I also go with organic whenever possible and always with my dairy and meat. All in all this isn’t even unhealthy, it’s packed with veggies, healthy fats, contains probiotics, is gluten free, and has tons of fiber.

Ingredients:

  • Organic shredded mozzarella cheese
  • Quinoa and black bean tortilla chips (gluten free, my favorite chip and minimal ingredients)
  • Fire roasted diced green chile
  • Organic grass-fed plain yogurt (I eat full fat not that low-fat, fat-free fake stuff your body can’t recognize)
  • Bruschetta topping from Trader Joe’s
  • Black bean dip
  • Salsa
  • Fresh spinach
  • Guacamole

Start with chips, layer on cheese then the other ingredients, this can be served heated or unheated.

I use the black bean dip for the protein instead of ground beef and use the plain yogurt as an alternative for sour cream.

I recommend a nice margarita with this, tequila, fresh lime and orange juice and a salted rim, yum!
