Roasted Sweet Potato, Tri Colored Carrots and Corn with Fresh Herbs, Summer Baby Onions, Fresh Cilantro and Basil

Ingredients:

  • Sweet potato, 8 small or 2 large
  • 1/3 bunch basil
  • 3 summer baby onions, stems included
  • 1/2 bunch cilantro
  • 2-3 carrots depending on size
  • 1/2 bag frozen organic sweet corn
  • 1 tablespoon olive oil
  • Sea Salt, garlic powder and red pepper flakes to taste

Preheat oven to 400 degrees

Coat bottom of baking dish with olive oil

Chop up sweet potato and tri colored carrots into relatively even slices, add in onions and sweet corn, toss with olive oil and bake for approximately 1 hour 10 minutes.

Chop herbs up and add them to the veggies half way though the cooking process and mix it all together, this will also allow the vegetables to cook evenly.

Season with sea salt, garlic powder, and red pepper flakes to taste.

Remove from oven and let cool before adding to salad. I suggest baby kale, toss with a honey mustard vinaigrette for a delicious and easy summer salad.

If you are in the mood for eggs, add the roasted veggies to a frying pan, crack an egg over the top and you will have a delicious meal in minutes!

These veggies are also delicious on their own, totally versatile, and great to make a batch of to add to various meals throughout the week whether it’s an awesome summer salad topper or your breakfast of eggs or tofu scramble. They will help with sweet cravings and add substance to lighter meals while adding fiber to protein packed meals like roasted chicken.

I purchased all of these ingredients at the farmers market for under $10.

Now I get that this was probably not the post you were expecting after weeks of being away getting married and honeymooning but rest assured those posts are coming! Of course the first thing I did when I got home was start cooking and it inspired this post. I’ll be sharing all about our big day, honeymoon tips, rehearsal dinner ideas and a ton of other things I’ve thought up over the coming weeks.
