These blue potatoes and sweet potatoes with fresh herbs are delicious enough to eat alone or can be served as the perfect side dish. Colorful Roasted Potatoes Ingredients

  • 1 large sweet potato
  • 10 small blue potatoes
  • Fresh rosemary to taste
  • Fresh oregano to taste
  • Red pepper flake
  • Coarse ground sea salt
  • Dried chives
  • Olive Oil

Preheat oven to 400 degrees Wash, then slice up blue potatoes into halves and sweet potatoes into relatively even size chunks so they all cook evenly Place the potatoes on a pan greased with olive oil Drizzle the potatoes with olive oil and top with fresh herbs like oregano, rosemary, and chives Top with course ground sea salt and red pepper flake for just a hint of heat IMG_4957 Bake for one hour, testing with a fork to make sure they are cooked through IMG_4995IMG_4997 Drizzled with olive oil, serve and enjoy!
