Coconutty Quinoa:


  • 1 cup quinoa
  • 1 can coconut milk
  • 1 tablespoon chia seeds
  • Curry and salt to taste
  • 1/4 cup coconut shavings 

Easier than anything!

Soak Quinoa for up to 2 hours, I usually soak it with seaweed to add in minerals and help  break it down, rinsing is also fine, either way, drain in a fine-mesh sieve.

When cooking quinoa it’s 1 part quinoa to 2 parts liquid, I love to cook it with a can of organic coconut milk.

Put quinoa into a sauce pan, cover with liquid (the liquid will usually be about half an inch above the top of the quinoa) and turn heat on high bringing it to a boil. Once it boils, turn the heat down low and cover with a lid.

The quinoa will be ready in 10-15 minutes.

Once it’s cooked through (just a bit of crunch, nicely formed) and the liquid is gone, add in a bit of salt, curry, coconut shavings, and chia seeds. Serve but leave the rest covered until it cools for best consistency.
