IMG_5314IMG_5313 Cookies that won’t break your diet! Oh my! I’m not much of a baker since I hate following directions, measuring and timing. I’m more of an intuitive chef, but I had this idea and decided to throw this concoction together this weekend and it turned out great! I measured what I used just for you so you could recreate at home! My fiance was my taste tester and he totally approved! He liked that they weren’t too sweet and tasted healthier than per-packaged organic options while still satisfying his sweet tooth. Ingredients

  • 1.5 tablespoons coconut sugar
  • 1 handful grain sweetened chocolate chips
  • 1 handful peanuts
  • 1 tablespoon coconut oil
  • 2 tablespoons coconut shavings
  • 1 egg
  • 1/2 cup almond meal
  • 2 tablespoons coconut flour
  • 1/4 teaspoon vanilla extract

Preheat oven to 350 degrees Fahrenheit Combine all ingredients in a bowl and mix until flour is completely combined and dry ingredients become wet Separate and roll into cookie balls Place on a lightly greased pan and set in over to bake Cook time 18 minutes at 350 degrees Fahrenheit Yields 8 medium sized cookies, 12 small cookies For softer cookies add 1 extra egg or a bit of unsweetened vanilla almond or hemp milk until desired texture (1-2 tablespoons should be enough), this will decrease cooking time slightly so keep an eye on them around the 12-15 minute mark Drizzle with honey for a sweeter cookie These are gluten free, paleo, and divine!
