Applicious Kale Salad:

  • 4 large kale leaves
  • 2 tablespoons sunflower seeds
  • 1 tablespoon chia seeds
  • 1/2 apple
  • 1 tablespoon apple cider vinegar
  • Olive oil
  • Pepper to taste
  • 1 teaspoon course ground sea salt

Rinse  Kale leaves and dry with paper towel, or soak then spin to dry using a salad spinner.

Place kale in a large bowl and tear leaf from stem (you can hold the end of the stem and run your other hand down the spine of the stem toward the skinnier end to remove the leaf easily) then tear leaves with your fingers into small pieces.

Sprinkle with course ground sea salt then massage the kale, yes that’s right, massage the salt into the kale, sounds funny but trust me it totally helps break the kale down into a lettuce like texture.

Take apple and shave half over the salad using a cheese grater.

Top with a handful of sunflower seeds and 1 tablespoon of chia seeds.

Pour 1 tablespoon of apple cider vinegar and drizzle olive oil over salad, sprinkle with pepper and serve.
